“Kauai Coffee Coconut Caramel Crunch Brownie Bites”
TUTU’S ORIGINAL RECIPE (30+ Year Kaua’i Baker)
1/2 cup sugar
2/3 cup butter
1/4 cup water or coffee
1 (12oz semi-sweet chocolate chips)
2 teaspoon vanilla
4 eggs, beaten
1½ cup All-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Optional: 1 cup Macadamia nuts (chopped) Yummy!
Substitute: 1/2 cup oil instead of butter
1/4 cup of flavored Kauai Coffee Coconut Caramel Crunch (instead of water)
Preheat oven to 350 degrees. Grease and lightly flour a 10×15 inch baking pan. In a large saucepan combine sugar, butter, and water, heating until sugar is dissolved and butter is melted. Add chocolate chips and cook until melted. Stir in vanilla and set aside to cool. Add eggs to cooled mixture and mix well. Add flour, baking soda, and salt, blending thoroughly. At this point, you may add 1 cup of chopped nuts or 1 cup of chocolate chips, or 1 cup of whatever you like. Pour into the baking pan and bake for 40 minutes. Cool, slice, and eat!
Note: You may tweak it however you’d like and make it your own. Tutu personally likes the flavor of coconut and chocolate in her brownies by substituting butter with coconut oil.
EASY RECIPE (created for the busy baker)
1 box of your favorite brownie mix (We love the Ghirardelli brand)
Follow directions and substitute the water to the same amount of flavored Kauai coffee. You may also substitute vegetable oil to coconut oil for a more coconut taste. Bake as directed, cool, cut, and enjoy!
